I am wondering whether or not someone has experience with a simulation of a multi-element transrectal transducer (e.g. from BK Medical; https://healthmanagement.org/products/view/multi-element-ultrasound-transducer-microconvex-transrectal-8848-bk-medical-europe) using K-wave. If you would like to share your knowledge on this topic that will be great.

I don't know much about these transducers, but once you have drawn or otherwise defined their geometry, including the position of the array elements, you can apply a suitably delayed pressure wave (via source.p) to the voxels (in source.p_mask) that compose each of the elements. toneBurst() allows you to generate delayed (offset) waves, or you could write your own routine.
If for realism you need to suppress (attenuate) the waves coming from the inner side of the transducer surface, and only allow those emanating from the outer surface to propagate freely, things might get more complex of course.

If my elements are in a curved coordinate system, do I then need to do beam-forming myself?

No problem jjiangTech! If you have a transducer described in e.g. cylindrical coordinates, I guess you would first need to migrate to the Cartesian system used throughout k-Wave.
For simple transducers (which I believe yours is not), the kWaveTransducer class supports beamforming. For planar arrays, or transducers with complex curved surfaces, the beamforming algorithm would have to be implemented by the user, as far as I understand.
